SMOKED SALMON FRITTATA WITH CHIVES, BLACK PEPPER & CRÈME FRAÎCHE
Egg Fried Rice
Packed with lots of veggies, this is the perfect 'bowl food' to enjoy after school, either as a snack or a main evening meal. A great way to use up leftover rice.
You will need:
- 1 x Stirfry Pan
- 1 x Turner
- 1 x Whisk
Ingredients
- 1 tsp rapeseed or groundnut oil
- 2 cups (or whatever amount you fancy) leftover, cooled rice
- 1 or 2 eggs (depending on the amount of rice you have), whisked together
- selection of veg such as mangetout, baby corn, sugar snaps, peppers, frozen peas, frozen edamame
- a drizzle of sesame oil & soy sauce (optional)
Recipe
- Place the oil in a large frying pan over a medium heat
- Toss the veggies in and cook for 1-2 mins
- Add the rice and stir fry everything together for another minute or two, then add the eggs, stirring all the time
- When the eggs are set, season with the sesame oil and soy sauce if desired
