Egg Fried Rice

Packed with lots of veggies, this is the perfect 'bowl food' to enjoy after school, either as a snack or a main evening meal. A great way to use up leftover rice.

You will need:

  • 1 x Stirfry Pan
  • 1 x Turner
  • 1 x Whisk

Ingredients

  • 1 tsp rapeseed or groundnut oil
  • 2 cups (or whatever amount you fancy) leftover, cooled rice
  • 1 or 2 eggs (depending on the amount of rice you have), whisked together
  • selection of veg such as mangetout, baby corn, sugar snaps, peppers, frozen peas, frozen edamame
  • a drizzle of sesame oil & soy sauce (optional)

Recipe

  1. Place the oil in a large frying pan over a medium heat
  2. Toss the veggies in and cook for 1-2 mins
  3. Add the rice and stir fry everything together for another minute or two, then add the eggs, stirring all the time
  4. When the eggs are set, season with the sesame oil and soy sauce if desired
